Ingredients

  • 1 kg cleaned beans
  • 2 potatoes
  • 2 zucchini
  • 3/4 cups olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, crushed
  • 1 kg crushed tomatoes
  • 1/2 bunch chopped parsley
  • 1/2 bunch chopped mint
  • salt
  • freshly ground pepper
Instructions:
  1. Clean the beans, wash and drain. Cut the potatoes into chunks and zucchini into thick slices.
  2. Heat half the oil in a saucepan. Let the chopped onion for a few minutes over medium heat translucent.
  3. Add garlic, potatoes, zucchini and green beans. Mix the vegetables well lubricated. Finally add the tomatoes and cover the food. Simmer over low heat for about 40 minutes. After passing the juice, add the remaining olive oil, dill and parsley. Boil for another 5-10 minutes until the food to stay with the oil. During cooking always check the fluids.
