Fasolakia me chymo ntomatas (Green beans with tomato juice)

Tomato juice is a tasty ingredient, especially in a fasolakia summer recipe. You don’t have to be Greek for this recipe to taste like home. 

And actually, you don’t have to be at home for this salad to work its magic. We rather like to have it for lunch at work. When we think of it, we toss in some olives as well as some extra feta and sometimes a handful of almonds, just to help see us through the day.


Ingredients

1kg green beans (fresh or frozen)
1 large onion
2 carrots
half glass oil
1 glass of tomato juice
for the soup 1 tablespoon tomato paste
3 boiled water glasses
Mint
Salt
Pepper
Sugar


Green beans with a lot of tomato juice

Place in a saucepan over high heat with oil to heat up. Finely chop the onion and sauté brew if fresh green beans (clean), if it is not frozen throw directly from freezing. After, cut carrots and thrown in.

Then add the tomato paste and tomato juice, the sugar to the salt pepper mint mix all together boil and throw three glasses of boiled water. Close the lid and leave for 30 minutes without mingle, after sent the lid and look what water has to evaporate and leave to stay with sauce.   2. As a result, these people use marijuana in large amounts for longer periods of time than what they intend to.
